The Challenge: Bacon Bagel Breakfast Sandwich

It is time for another 30-Minute Meal. Yum, yum, yum! Today, we are looking at a breakfast creation that is epic!!! It is the Ultimate Bagel Breakfast Sandwich, including:

1. Rice Paper Bacon
2. Avocado Smash
3. Herb + Garlic Cream Cheese
4. Fresh Veggies
5. Everything Bagel

This crowd pleaser combines my world famous (okay not really...maybe one day) rice paper bacon layered on a toasted bagel with arugula, cucumber, and fresh tomato. Then, top it with a lime avocado smash and dairy-free vegan herb garlic cream cheese. 

Believe it or not, this is very simple dish to make that will only take you 20-30 minutes depending on how fast you chop veggies! 

But how do we make bacon? and cream cheese? Easy! Rice paper is the base for bacon. Wet it and it becomes very malleable and able to be baked. We make a bacon marinade and slather that on the rice paper then bake it for 8 minutes. The cream cheese we use a base of dairy-free cream cheese from Tofutti or Daiya or Kitehill or other brands. You pick! We then blend in some fresh herbs and garlic with some spices for an amazing kicked up vegan cream cheese.

Put it all together what do you got - that's right say it with me ULTIMATE BAGEL BREAKFAST SANDWICH. Surprise your loved one/enemies/family/boyfriend/girlfriend/dog/cat/coworkers ... etc ... with this treat and become their #1 cook.

Rice Paper Bacon

  • 10 pieces of rice paper (spring roll sheets)
  • 2 tbl olive oil
  • 2 tbl nutritional yeast
  • 2 tbl liquid aminos
  • Spices: 1/2 tbl garlic power, 1 tsp onion powder, 1/2 tsp chipotle chili powder, 3/4 tsp smoked paprika, 1/2 tsp salt, two pinches of black pepper
  • 1/3 tsp liquid smoke
  • 1/2 tbl maple syrup

Herb + Garlic Cream Cheese

  • 1/2 cup vegan cream cheese, plain
  • 1 tbl fresh dill
  • 1/4 cup fresh chives
  • 1/4 cup fresh cilantro, roughly chopped

Toppings

  • 1 medium tomato, sliced + deseeded
  • 1 cup arugula
  • 1 small cucumber, sliced
  • 1 large avocado + squeeze of lime

Other

  • 4 vegan everything bagels (or your own preference)

Equipment You'll Need:

Mixing Bowls . Sharp Chopping Knife . Measuring Cups + Spoons . Cutting Board . Small Bowl . Pastry Brush . Parchment Paper . Baking Sheet . Food Processor


Before You Cook:

  • Wash + chop fresh ingredients
  • Preheat oven to 400F
 1. To start, place spring roll on cutting board, and slice each sheet into 5 equal width pieces. I use a very sharp knife. If the sheet is cracking on the edges flip it over...usually one side is easier to cut. Apply a good amount of pressure and use a very sharp knife.

 2.  Stack two equal sized sheets together and dip into bowl of water to wet the entire strip. Run your fingers down the strip to squeeze out excess water and stack on a parchment lined baking sheet.

 3. Line your bacon pieces on a baking sheet lined with parchment. They'll be damp. Leave a bit of room between each sheet.

 4. Next, whisk together the marinade for the bacon - olive oil through maple syrup on the ingredients. Using a pastry brush (if you dont have one can use a spoon), paint on the marinade to each piece of bacon. Flip them and paint the other side. I use roughly one dip into the marinade worth for each two sides. Place into oven and bake for 8-9 minutes on the top rack. Watch closely.

 6. Chop cucumbers, tomatoes, and measure out arugula. Mix the avocado with a squeeze of lime and pinch of salt in a seperate bowl.

 9. To construct, spread cream cheese on the bottom of the bagel. Stack on 4-5 bacon pieces. Add veggies + avocado smash. Spread a bit more cream cheese on top of the bagel. Smash it together. Eat. Enjoy!
