The Challenge: Everything Biscuit Breakfast Sandwich
For me, one of the hardest meals of the day to eat vegan is breakfast. Most breakfast foods are involving cheese, eggs, meat, or some kind of dairy. It has always been a struggle going to brunch or eating with a ton of variety. So, I have focused a lot of meals on making breakfast items vegan.
A popular breakfast item - the biscuit sandwich. Today, we are taking the egg, cheese, and sausage breakfast sandwich. But…of course we are going to kick it up a couple notches. Rather, than it being a regular biscuit we are going to make it an everything biscuit. This dish builds off my recent post for 25-Minute Everything Biscuits. Then, we are going to top it with vegan cheese, maple “sausage.” chipotle aioli, avocado, and tomato!
Our maple “sausage” is a delicious blend of mushrooms, lentils, and fresh herbs like thyme parsley, sage, and rosemary! We make a delicious sausage patty and fry it up. You can make a ton of these and freeze them up…yum, yum, yum!
From there, we layer on some delicious vegan cheese you’ll find in the ingredients, avocado slices, tomato slices, and a dairy-free chipotle aioli that we make with vegan mayo, chipotles in adobo sauce (if you haven’t used these, you need to start), and then we eat it!!!
Let’s just say this is one kick ass vegan breakfast sandwich that you will love to eat, and it will be a nice go to vegan dish you can have again and again.

Maple Sausage Patty
1 garlic clove, minced
1 large shallot, diced
1 cup baby bella mushrooms, diced
1/3 cup green french lentils + 2/3 cup vegetable broth
1/4 cup panko breadcrumbs
1 tsp flaxmeal + 1 tbl water
1 tbl maple syrup
Spices: 1 tbl fresh diced thyme, 2 tbl fresh diced parsley, 1 tbl fresh diced sage, 1 tsp dried rosemary. 1/2 tsp garlic powder
1/4 cup rolled oats
1 chipotle in adobo sauce + 2 tbl of adobo sauce (canned)
1/4 cup vegan mayo
1/2 lime, juiced
pinch of salt + pepper
Vegan Everything Biscuits (make recipe into 4 large biscuits)
4 slices of vegan cheese (I used Field Roast Chao)
medium avocado, cut into slices
large heirloom tomato, cut into slices
Equipment You'll Need:
