Vegan Apple Donut Muffins? Wait what.

Yep. I went apple picking a couple weeks ago, and I had too many apples. So, I have been making apple items left + right. I'm not a baker. I'll tell you something shocking - I don't really like sweets. What I do like is more savory desserts or treats. I thought savory apple donuts would be amazing.

Then I went to the store ... after I made a recipe for apple donuts ... only to find no donut pan. I was then remembering one time that I saw a bakery made donut recipe into muffins. I have a muffin pan...why not give it a try.

A cinnamon appley walnuty orangy flavor profile with a density like a donut in a muffin shape. Yum! And really what's better than a guy baking in the kitchen on Sunday mornings. That's how vegan cavemen do it. I blended in some walnuts and orange peel to give this muffin another notch of tastiness.

The recipe is actually quite simple, and we make this in under 30 minutes! Simple, easy, lovely fall recipe that your family will love.

Apple Donut Muffins

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 3/4 tbl cinnamon
  • 1/2 medium orange peeled + diced
  • 2 tbl vegan butter, melted

 

  • 2 flax eggs (2 tbl flaxmeal + 5 tbl water)
  • 1/2 cup coconut sugar
  • 1/3 cup walnuts, diced
  • 1/4 cup dairy-free milk + 1 tsp white vinegar
  • 1 medium apple, diced
  • 1 medium apple, grated in food processor

Equipment You'll Need:

Cutting Board . Sharp Cutting Knife . Measuring Cups . Measuring Spoons . Food Processor . Spatula . Mixing Bowl . Muffin Pan


Before You Cook:

  • Wash and cut all fresh ingredients
  • Process apple
  • Melt vegan butter
  • Mix flaxmeal with water, set aside
  • Mix dairy-free milk with vinegar, set aside
  • Add oil or vegan shortening to the muffin pan, set aside
  • Preheat oven to 375
 1. For the medium apple diced, place in a small bowl, pour in 2 tbl water and a pinch of cinnamon. Microwave for 5 minutes. Mash up with a fork. This is a quick applesauce.
